Crystallized Flowers from S. Davis found in POWER FLOWERS
Ingredients:
2 large egg whites, at room temperature
1 teaspoon water
1 dozen pesticide-free edible flowers, such as violets, marigolds, rose petals
1 cup superfine sugar

Combine the egg whites and water, beating lightly with a fork (do not overbeat).
Dip a paint brush in the egg whites and paint a flower, covering the petals thoroughly but not excessively.
While still wet, gently sprinkle with superfine sugar.
Put the crystallized flowers on a sheet pan lined with waxed paper. Allow to dry for 12 to 24 hours.
These make beautiful decorations for cakes and desserts.
This same technique may be used to make crystallized fruit by dipping the fruit (rather than painting) into the egg white mixture.
