1. I love veggies, but the array of vegetables I'll eat cold as a snack are pretty slim: carrots, cucumber, broccoli, and celery. Everything else has to be cooked for me to enjoy it.

2. I enjoy trying new types of food and new locally-run restaurants. My favorite local discoveries have been Filipino and Egyptian, both family run.

3. Though I'm not vegan, I frequent local vegan restaurants, for both health and personal reasons. We're incredibly lucky to have multiple vegan establishments, including a fast food restaurant with a drive-thru!

I am delighted to see this book has been published. Best of luck with it. I hope to get one for myself.

I don't know where Shannon lives, but I can't even get an all vegetarian meal when I go out in Wichita, much less vegan. One restaurant advertised they offered vegetarian fare with their menu. The restaurant closed after six months!

Hi Sandra and Shannon - this does seem to be an excellent book to write for so many to be able to refer to. I love your range of food choices too ... I eat lots of veggies, though probably will have some fish with them, I always have a salad for lunch - habit. Cheers Hilary

I live in Colorado Springs, where we have a surprising wealth of vegan and vegetarian options! I think a lot of it can be credited to a local vegan author who puts on annual events and has gotten a lot of restaurants to be more aware and to have more veg and vegan options. I definitely know we're lucky here!

We have some amazing family-owned restaurants here that we love to frequent when possible. I'm lucky to live in an area that's big on supporting local.
